Structurally, it is an oligosaccharide that takes the form of several N-acetylglucosamine molecules linked together, and for this reason it is also known as oligo-N-acetylglucosamine". Chitin oligosaccharide is a milky white powder with about one-third the sweetness of sucrose. It is recognized as having many biological functions, and its diverse properties make it useful in a wide range of applications.
