Quercetin is a flavonoid widely distributed in nature. Quercetin inhibits the activity of catechol-O-methyltransferase that breaks down the neurotransmitter norepinephrine. This effect may lead to elevated levels of norepinephrine and an increase in energy expenditure and fat oxidation.
